New year & cardamom buns

So the Christmas and New year celebration is over for this time.
The decorations are all gone.
The other day I baked some buns. Since cinnamon felt too christmasy, 
so I decided to go for cardamom instead.

Cardamom buns
Makes about 25 buns

100 g soft butter
150 ml granulated sugar 
½ tsp salt 
1½ tsp ground cardamom 
200 ml milk
50 g fresh yeast
1100 ml all purpose flour

Filling
200 g soft butter
100 ml granulated sugar 
75 ml freshly ground cardamom
75 ml sugar syrup

1 egg, lightly beaten for egg wash
15 ml sugar

1. Melt the butter in a saucepan, add the milk and heat until approximately 37°C (99°F).
2. Sprinkled yeast in a large bowl and pour over the milk and butter. Stir until the yeast is dissolved.
3. Add sugar, salt and cardamom.
4. Gradually add flour, and work it until dough is smooth and elastic. Cover bowl with a cloth and leave to rise for 60 minutes.
5. Combine the ingredients to the filling and work it smooth in a bowl.
6. When dough is ready, divide it into two pieces. Roll out the first piece of dough into a large rectangle, about 30x40 cm.
6. Spread half of the filling on top of the dough, then fold it in half.
7. Cut out long strips of dough, about 1,5 cm wide. Then cut the stripes almost in half, lengthwise (like long trousers)
8. Twist the stripes together into a knot and put on a tray.
9. Repeat with the other piece of dough.
10. Cover with a cloth and leave to rise for 40 minutes.
11. Heat oven to 225°C (437°F). Brush the buns with beaten egg and sprinkle suger on top. Bake for about 12 minutes in the middle of the oven.
