Homemade mayo with dill and lemon

It seems like this blog turned into a food blog.
Lately I've been very inspired when it comes to cooking and baking.
I have many new recipes that I want to share with you, especially cakes and cookies.
But today I give you this delicious homemade dill and lemon mayo with you. 
Normally I'm not a mayo person.
But at New Year's Eve we made some mayo to go with the sea food and it really
changed my view when it comes to mayo! I've always thought it was complicated
to make your own mayonnaise - but it's not!
It's super easy and it tastes WAY better than the one you find in the grocery store.

 Mayonnaise with dill and lemon

2 egg yolks
200 ml corn oil (rapeseed oil or sunflower oil works too)
1 tsp dijon mustard
1 tbsp lemon juice
1-2 tsp freshly chopped dill
salt
pepper (preferably white) 

                    1. Separate the egg yolks from the egg whites and put them in a   bowl or a mixer.
                    2. Add the mustard and lemon juice.
                    3. Use a mixer or a hand mixer. Start to beat the egg yolks and then  add the oil gradually. 
                    Beat until nice thick texture.
                    4. Add the dill, salt and pepper and give it a good stir.
                    5. Leave it in the fridge overnight to bring out the flavors.

In my family it's tradition to have egg sandwiches with mayo and herring for Sunday breakfast.
I can't say that I keep this tradition alive, but with this homemade mayo I think I can
have an egg sandwich as a quick lunch every now and then.
